during harvest, all grapes are processed in the backyard. The grapes got partially destemmed (approx. 10% stems in the mash) and fermented naturally in stainless steel and fiberglass vats. After 12 days we pressed the mash and the wine was pumped into one barrel (225l Barrique) into the cellar. The wine matured on gross lees for 4 years and 2 months, without any additives, without fining, without temperature control and without filtration. We bottled it by hand on November 12th, shortly before the full moon arose to enrich AEON with the moons energy.
