VINEYARD SITE: Seefeld. sandy soil.
Seefeld is situated in the west of Neusiedl am See, at the last bits of solid land before the marshes of the lake start. The whole plot is flat, dry and very windy.  Since Seefeld is hot and straight in the haze of lake Neusiedl, the grapes grow very intense aromas.

VINEYARDS
GRÜNER VELTLINER (1 plot – planted 1978) + WEISSBURGUNDER (1 plot – planted 1980) total size 0.27 hectare – 0.67 acres

VINIFICATION
during harvest, all grapes are processed in the backyard. Grüner Veltliner and Weissburgunder ferment and mature separately in barriques. without any additives, without fining, without filtration and without temperature control. Blended together shortly before bottling. We bottle each release of AEON WHITE  shortly before the full moon arises, to capture the moon’s energy.

AEON WHITE 2022: no added sulfites. alc.11% vol., 0.7g residual sugar; 7.6 acidity, total SO2 <10mg, 1.300 bottles produced, bottled in February 2024, harvest September 2022, EAN-bottle: 9120069512021 – EAN-case: 9120069512014
VINIFICATION
whole bunch fermentation for 6 days, stamped by foot and kept on the mash for another 4 days, matured in barriques until bottling in February 2024, matured in the bottle for another year, released in SPRING 2025
AEON WHITE 2021: no added sulfites. alc.11% vol., 0.7g residual sugar; 7.9 acidity, total SO2 14mg, 600 bottles produced, bottled in August 2023, harvest September 2021, EAN-bottle: 9120069511338 – EAN-case: 9120069511321
VINIFICATION
all grapes went straight into the press, no skin contact, fermented and matured in barriques for 24 months, matured in the bottle for another year, released in SUMMER 2024
AEON WHITE 2019: no added sulfites. alc.12% vol., 0.7g residual sugar; 7.9 acidity, total SO2 9mg, 600 bottles produced, bottled on April 26 2022, harvest August 2018, EAN-bottle: 9120069511338 – EAN-case: 9120069511321
VINIFICATION
50% goes straight into our screw press (outside in yard). Other 50% are destemmed and kept on skins for 2 weeks. Juice then goes straight into barrique barrels (225L). Grüner Veltliner and Weissburgunder fermented seperately. everything matured on gross lees for 30 months without any additives, without fining, without filtration and without temperature control. Blended together shortly before bottling.
AEON WHITE 2018: alc.11.5% vol., 0.7g residual sugar; 6.5 acidity, total SO2 33mg, 7.800 bottles produced, bottled on March 25 2021, harvest August 2018, EAN-bottle: 9120069511338 – EAN-case: 9120069511321
VINIFICATION
